Steps: 

Grant Special Access for an Assignment

1. Go to Assignments
2. Open the assignment → Edit Assignment

3. Go to Availability Dates & Conditions

4. Click Manage Special Access

5. Select Give special access to specific users

6. Click Add Users to Special Access

7. Set new due/end date

8. Select the student

9. Click Save and Close

Grant Special Access for a Discussion Topic

Go to Discussions

Open topic → Edit Topic

Go to Availability Dates & Conditions

Click Manage Special Access

Set new availability dates

Select student

Click Save
